The Bellini was invented sometime between 1934 and 1948 by Giuseppe Cipriani, founder of Harry’s Bar, the iconic drinking establishment in Venice, Italy. The sunset-pink color reminded Cipriani of the toga worn in a painting by 15th-century Venetian artist Giovanni Bellini…hence the name. The drink consists of puréed white peaches and Prosecco.
